2018 Estate Cabernet Merlot

Winemaking
The fruit was hand-picked to maximise quality and to allow for hand sorting in the winery. Fermented in open top fermenters with indigenous yeast, for ten days. The wine was gently pressed off skins in a basket press, to complete alcoholic fermentation in stainless steel tanks. The wine was then inoculated for malolactic fermentation and racked to barrel. The wine spent a total of 15 months maturing in new and seasoned French oak. The component wines were blended and gently fined immediately prior to bottling. This is a small-volume wine that was handled separately through its life and speaks of the region where the grapes were grown.
Tasting Notes
Vibrant and intense with red berry fruits, cassis, plum and dark chocolate. Fine, silky tannins provide an elegant structure and sustained length.
